Pasta and Garlic and Oil 

My favorite go to dish in a Flash when you have unexpected company 😊

Pasta amount according to people 

6 Garlic cloves roughly chopped 

1/2 good olive oil in sauce pan 

3 lg spoons of starched water from pasta water ,  put into sauce pan 

Drain pasta and place in sauce pan heat and serve!

Swedish Meatballs

First let me say this is a number 1 crowd pleaser.  When I make it I always make at least 4 lbs of Chop Meat.  One pound is never for my crowd they simply love it .  I adapted this recipe from a cookbook  from a dear friend from her PTA  fundraiser Cookbook and have been making it since 1991.

Ingredients:

1 lb Chop Meat

1 Cup  Bread Crumbs

1/2 Cup Milk

1 Egg

1 tsp. Salt @ Pepper

1/4 tsp Nutmeg

1/2 Cup Onion Chopped

1/3 Cup Margerine

1 1/2 Tbsp Flour

1 Cup Beef Broth

Directions:

Soak bread crumbs in milk for 15 minutes.  Mix in with Chop meat .  Add seasoning and egg. Fry onion till clear in Margerine when soft Ladel out onion and add to chop meat .  Mix all of your ingredient well.   Make meaballs and fry in Margerine .  When done frying remove meatballs and place in a seperate tin .  Add broth to fryer and scrap up bits , add flour, cooking slowly to form gray.  Add gravy to meatball’s and Serve! SPECIAL NOTE :  While frying your Sweish Meatballs add more Margerine to reduce sticking .

ToniAnns Chicken Piccata and side of Penne Pasta 


The  ultimate in gourmet comfort food is so quick and easy to create with a few short steps and so quick to get on the table for dinner.

  1. 8 Boneless Skinless Chicken Breast
  2. 1 1/2 cup Flour
  3. Salt & Cracked Black Pepper
  4. 2 Lemons
  5. 1/2 cup of Capers
  6. 1 1/4 cup Chicken Stock
  7. 11  Tbsp.  Butter
  8. 7  Tbsp. Olive Oil
  9. 5 oz. White  Button Mushrooms  ( My Family enjoys  this in their recipe but generally doesn’t   go in the classic  recipe)
  10. Handful of Fresh Parsley Chopped

Directions:

Season your flour with salt and pepper, dredge your chicken cutlets in the flour

mixture and set aside.  In a large skillet  heat half of your butter and half of your olive oil , proceed to  cook your cutlets  in your skillet.  Lightly brown the  cutlets about 3 minutes on each side  as needed.    Add the rest of the  butter and olive oil.  Once all the cutlets are sautéed set aside. Sauté   your mushrooms and capers in the butter and oil. Add your Chicken stock  scraping the  bottom of  your skillet.  Proceed to start cooking your  pasta according  to the manufacturing directions.  While you’re water is coming to a boil, put the cutlets back in to the skillet and heat.  Squeeze the juice of 1 1/2 lemmon over the cutlets.  The remaining half slices place on top with the chopped parsley just before serving.  Reserve enough  juice for your pasta,  plate and serve!

Easy Blueberry Jam

  • While I was on a Short Vacation I was able to pick up some fresh Blueberries.  I enjoy checking the local farmers markets to see what is in season in the area, these local Blueberries were Bursting with flavor and appetizing to my Eyes as Well.   So I decided to buy some and make some delicious Jam.  I used only 3 ingredients in this recipe which made it so simple.  Enjoy and have fun with your children making this it only takes a few minutes.

Ingredients:

  1. 1 Pint of Blueberries 
  2. 1/2 Cup of Raw Honey 
  3. 1 1/3 tps. Lemmon juice 

Directions 

Clean and discard any stems from the blueberries. Place them in a pot , bring to a boil then reduce to low heat with all above ingredients.
Proceed to cook your blueberries until they are completely cooked thru about 20 minutes.  They will start to look like the picture below.  Stir your Blueberries so that they will break open and relase their flavor for your jam.


Once you reach the correct consistently have your canning jars sterilized and ready for filling. I was able to get three jars from these Blueberries!

Peppercorn Tuna Steak

  • Tuna Steak is so easy to prepare ,  I made it tonight for my hubby he just loves it.  With three simple ingredients and it is so easy to prepare outside on your grill or either in a cast iron frying pan and you are done…

Ingredients are :

  1. Tuna Steak
  2. Fresh Coarse Black Pepper
  3. Sea  Salt
  4. Olive Oil

Lightly brush your  Tuna Steaks with olive oil, and apply your peppercorns and seasalt on all sides .  Have your grill on  high  heat, at least 400 degrees.   You know when You’re  steaks are done when you’re steaks are  beige on the out side, and pink on the inside It should be like sushi,  if you over cook your steak it will be dry and not moist with flavor.

ToniAnn’s Bean Salad

Look out Spring  here we go, time to break out the Barbecue and start grilling, and add  more flavorful salads to our menu.  This simple Bean Salad is very reasonable to prepare to.

  

Ingredients 

  1. 1 15 oz Can Red Kidney Beans 
  2. 1 15 oz Can of Cannellini Beans 
  3. 1 14.5 oz Can of Yellow Wax Beans 
  4. 1 14.5 oz Can of Cut Green Beans 
  5. 2 garlic cloves chopped 
  6. 1/4 cup evo 
  7. Either Red Wine Vinegar or Balsamic which ever you prefer,  the amount Of vinegar You use depends on your own personal preference.
  8. Handful of Cherry tomatoes 
  9. Handful of Basil Chopped 
  10. Salt and Pepper to taste 
  11. Garlic Powder 1/4 tsp 

All your canned goods should be drained and poured into a bowl, followed by the rest of the seasoning.  Chill at least 1 hour, before serving.

    Simple Easy 6 Ingredients Cucumber and Red Onion Salad

    This is such a easy and simple salad, and will compliment any dish,  and it’s only 6 ingredients that go into this  simple receipe  that you can  even  eat alone or with any main dish you decide .  I use a lot of   Cento Brand Products,  they are. All.  Natural ingredients, I highly recommend   useing them.

       

     Ingredients 

    1. 1 Cucumber  Chopped
    2. 1/2 Red Onion Chopped
    3. 1/4 tsp.  Cento Garlic Powder
    4. 1/4 Cup  Good Extra. Virgin Olive Oil ** Remember your eating this raw so taste is Key*
    5. Cento Balsamic Glaze I never measure  I splash on to taste
    6. Handful of Chopped Fresh Basil
    7. Salt & Pepper to Taste

    Peel and chop your cucumber , chop your red onion and basil add. All your seasoning , toss to coat and your done. !!

    ToniAnns Sausage and Peppers

    Who dosent love a Good tasting sausage and peppers sandwich on a hard roll, sub, grinder dripping with homemade Italian sauce?  Wherever you come from North or South, East or West  it sure is a great comfort food.   Well this one tray pleaser is great for company,  with just a few short list of ingredients .   It’s  so easy to put together, just mix once or twice   during cooking time , and  it will be ready to serve before you know it.  I hope you enjoy it as much as My Family.

    Ingredients :

    1. 2 lbs. of Sausage  I use  1 lb. Hot and  1 lb. Sweet
    2. 1 28 oz Can of Crushed Tomatoes and 1/4 of the Can of Water
    3. 6 Green Bell Peppers sliced Juliene 
    4. 2 Medium Onions sliced  not chopped
    5. 2 tsp. Of chopped Fresh Garlic
    6. 1/2 tsp. Salt
    7. 1/2 tsp. Ground Black Pepper
    8. 1 tsp. Granulated Garlic
    9. 3 – 4 Chopped Fresh Basil
    10. 2 tbs. Olive Oil

      
    Directions:

     

    Preheat your oven 350 degrees.  In a 13 X 9 tin baking pan.  I love useing baking tins especially when having company, less clean-up, more socializing .  Cut your sausages in half, and  place into the  baking tin.  Slice the  green peppers, and onions also place into the baking tin.  Pour your 28 oz can of Crushed Tomatoes into the tin pan , add  1/4 can of water from the crushed tomatoes .  Add your spices salt ,  ground black pepper,  garlic powder  and chopped garlic.  Mix in pan gentley  add chopped fresh basil and sprinkle with olive oil on top and bake for at least 2 hours uncovered .  Turn as needed,  enjoy and don’t forget the  BREAD !!

      Creamy Garlic Pasta 

      Who  dosent love Pasta ?  At least once a week we all can really indulge, right .  This Pasta is so creamy and tasty you will want to make it over and over again it’s a great mid-week meal.  Not only is it  quick and easy meal , it’s reasonable too!

        

      Ingredients

      1. 2 tsp Extra Virgin Olive Oil
      2. 4 Garlic Cloves chopped
      3. 2 -3 Tbsp Butter
      4. 1/2 tsp. Salt
      5. 1/2 tsp. Black Ground Pepper
      6. 3 Cups of Chicken Stock
      7. 1/2 lb Angel Hair Pasta
      8. 1 Cup Grated Pecorino Cheese
      9. 3/4 Cup Heavy Cream
      10. 2 Tbsp. Chopped Fresh Parsley

      Directions:

      In a large pot bring your olive oil and chopped garlic on a  low medium heat and cook  about two minutes   Add butter, salt pepper and chicken stock.  Bring to a boil, once boiling put your pasta in and  cook pasta according to box directions ,  reduce heat and add Grated Pecorino Cheese , once cheese is  completely melted  turn heat off and stir in heavy cream and serve immediately top with chopped Parsley.

      My Moms Italian Red Clam Chowder

      Hi guys I love this recipe, my Mother made this chowder  for us on  Friday’s .  Especially that we didn’t eat “Meat on Friday”, during  the Lent  season.    My family loves this recipe , I’m sure yours will  too  .   You can also add fresh whole clams if you prefer.  Just make sure  you have time to clean your clams under cold running water, and remove any debris.  Add the Raw Clams at least ten minutes to your pot and allow to simmer  prior to serving .   I love this recipe too,  because  a few chops of the vegetables and the hard work  is done , the rest is opening a few cans.


      Ingredients 

      1. 1 8 fl oz. Clam Juice
      2. 1 8 oz tomato sauce and 1 can of water
      3. 1 10 oz  Fancy Whole Baby Clams in Can
      4. 3  Medium Carrots Chopped
      5. 3 Stalks of Celery Chopped
      6. 3 Russet Potatoes Chopped pre-boiled
      7. 1 Medium Oinion  Chopped
      8. 1 Bay Leaf
      9. 1 tsp. Salt
      10. 1 tsp. Black pepper
      11. 1 tsp. Oregano
      12. 1 tsp. Garlic Powder
      13. 1 lb. of Ditalini Pasta

      In a stock pot sauté your medium chopped onion, sauté till translucent in olive oil.  Add carrots, and  celery  sauté with your onion.  Add Clam Juice, Tomatoe Sauce and one can of water from your 8 oz of tomatoe sauce.  Mixing all ingredients, add seasoning Bay Leaf , Salt and Pepper , Oregano and Garlic Powder.  Let simmer till your vegetables are done.  Then add pre-boiled potatoes and   Fancy Whole Baby Clams.    Cook your Ditalini according to directions and then add to your chowder.
      This is a Easy Manhattan Clam Chowder Soup Enjoyed by Many family members of mine , and thought I would share it with You.
