Easy Blueberry Jam

  • While I was on a Short Vacation I was able to pick up some fresh Blueberries.  I enjoy checking the local farmers markets to see what is in season in the area, these local Blueberries were Bursting with flavor and appetizing to my Eyes as Well.   So I decided to buy some and make some delicious Jam.  I used only 3 ingredients in this recipe which made it so simple.  Enjoy and have fun with your children making this it only takes a few minutes.

Ingredients:

  1. 1 Pint of Blueberries 
  2. 1/2 Cup of Raw Honey 
  3. 1 1/3 tps. Lemmon juice 

Directions 

Clean and discard any stems from the blueberries. Place them in a pot , bring to a boil then reduce to low heat with all above ingredients.
Proceed to cook your blueberries until they are completely cooked thru about 20 minutes.  They will start to look like the picture below.  Stir your Blueberries so that they will break open and relase their flavor for your jam.


Once you reach the correct consistently have your canning jars sterilized and ready for filling. I was able to get three jars from these Blueberries!

Food Trend for 2016

This year food trend for 2016 to watch is going  to be a year of  a lot of whole foods .  Consumers  are looking to pay a little extra for their foods.  Rather then  getting bargain foods . They  shop organic foods, specialty food markets, local food stands, and  have home grown  gardens .  Potted herbs and potted gardens  are huge in Restaurants all  Over  major  cities today . They take pride using their own vegetables and fresh herbs and list them on their menu which have big draws to the consumer.  Dried   beans are so healthy for you and simple to create just like my  “New Years Good Luck Lentil Recipe” .  Beans and  certain types of legumes are a great protein.  Vegetables are a huge  staple , and will be taking center stage this year,  no more cutting ends off the ends of your    vegetables  clean and cook whole  giving (more nutrients) for you.

I have canned all my own Tomatoes ,  peaches, artichoke hearts, eggplant, and even green olives to name a few last summer and will share those great recipes , soon too.  Let’s Get cooking  for 2016….

Apple Pie in a Jar

  • Ingredients

  • Quart Mason Jars
  • 5 apples of your choice per Quart Jar
  • 1 cup of  White Cane Sugar
  • 1/4 cup of Corn Starch
  • 1 tsp. Ground Cinnamon
  • 1/2 tsp. Ground Nutmeg
  • 1/2 cup Water
  • 3/4 cup Apple Juice OR Apple Cider
  • 2 tsp Lemmon Juice
  • Directions

  • Core, peel and slice apples.  Place in boiling water for 1 minute.  Drain your apples keep warm and set aside in a seperate bowl.  Bring remaining ingredients in a saucepan, heat to  just  before  a boil to a thick syrup  consistency .  Fill your Sterilized Quart Jars alternating apples and then  syrup.  Fill to you reach one inch below neck of jar ,  run a  plastic knife or Ball Canning Tool inside of your jar making sure you have no air bubbles inside your jar “Process in a water bath” for  twenty-five minutes.  Now each quart is good for  one image.jpgpie crust of your choice.
