Rigatoni with Broccoli Rabe or Rapini and Sausage 

Ingredients :

1 head of Broccoli Rabe or Rapini cleaned chopped stems removed 

1 lb. of Hot or Sweet Sausage. Your choice

1 lb.  Rigatoni pasta

6 Garlic Cloves chopped 

1  Can of  Chicken Stock

5  Tbs of  Evo

1/4 tsp Salt &  Pepper

1/2 tsp.  Cento Garlic powder


Directions 

Bring a large pot of water to a boil,  boil broccoli Rabe for  ( 3 )  minutes drain  well and set aside.   A quick (3) minute boil of  your Broccoli Rape or Rapini will reduce the taste of the bitterness .  Sauté  your sausage casing removed in EVO.  When almost brown add chopped garlic. Continue to sauté then add Broccoli   Rabe and spices ,  add  can of chicken stock.  Incorporate all  continue to sauté .



Bring pasta to boil ,  take at least 3 1/2  laddels of starch water , and add to create  more juice to your  Sausage  & Broccoli Rabe.  Bring all together once pasta is drained and serve .  Serve with grated Pecorino Romano on top.

ToniAnns Chicken Piccata and side of Penne Pasta 


The  ultimate in gourmet comfort food is so quick and easy to create with a few short steps and so quick to get on the table for dinner.

  1. 8 Boneless Skinless Chicken Breast
  2. 1 1/2 cup Flour
  3. Salt & Cracked Black Pepper
  4. 2 Lemons
  5. 1/2 cup of Capers
  6. 1 1/4 cup Chicken Stock
  7. 11  Tbsp.  Butter
  8. 7  Tbsp. Olive Oil
  9. 5 oz. White  Button Mushrooms  ( My Family enjoys  this in their recipe but generally doesn’t   go in the classic  recipe)
  10. Handful of Fresh Parsley Chopped

Directions:

Season your flour with salt and pepper, dredge your chicken cutlets in the flour

mixture and set aside.  In a large skillet  heat half of your butter and half of your olive oil , proceed to  cook your cutlets  in your skillet.  Lightly brown the  cutlets about 3 minutes on each side  as needed.    Add the rest of the  butter and olive oil.  Once all the cutlets are sautéed set aside. Sauté   your mushrooms and capers in the butter and oil. Add your Chicken stock  scraping the  bottom of  your skillet.  Proceed to start cooking your  pasta according  to the manufacturing directions.  While you’re water is coming to a boil, put the cutlets back in to the skillet and heat.  Squeeze the juice of 1 1/2 lemmon over the cutlets.  The remaining half slices place on top with the chopped parsley just before serving.  Reserve enough  juice for your pasta,  plate and serve!

Homemade Pasta for Ravioli

Pasta

  • 2 3/4 cups of  (all purpose) flour
  • 3 eggs
  • 1 tsp salt
  • Directions –

  • Make a mound of your flour into a deep well, high enough that when adding your eggs to the center of your well, your eggs will not run out.  Add eggs to center of well and salt.  Mix eggs and salt with a fork ,  and then slowly start incorporating flour.  As soon as your egg mixture is no longer a liquid, form a dough it will be sticky.  Scrap your work surface making to get all of  your dough.  If dough is too DRY add a few drops of cold water, it too WET add  some flour.  Knead your dough into a ball always knead with the ball of your hand , and push away from you and turning  while you are kneading .  Knead your dough  for 10 minutes.  If you are useing a pasta machine follow directions of your machine.   The dough should be very smooth.  Wrap in clear wrap for 15 minutes at room temperature.  You can then roll out. Unwrap cut in half ,cover other half with remaing clear wrap.  Roll out to  1/8 inch thick and then you can make your raviolis.
  • Ravioli Filling

  • 2 1/2 lbs. Ricotta, well drained

  • 1 /2 cup grated Parmigiano Cheese
  • 1 egg white
  • 2 tsp freshly  finely chopped parsley
  • Salt and Black Pepper to taste
  • Mix all ingredients in a large bowl to well blended.  When making Ravioli  as you can see here in my picture I used my Ravioli Form. After I make my ravioli I lay them out on top of a table with corn meal under them.image    There are many  types of  ravioli cutters you can buy now.   They have Pasta ravioli wheels,  ravioli forms,  ravioli  cookie cutters to name a few.  You can fill your ravioli with  vegetables, meats, even fish such as lobster, you decide it’s your meal  !    To cook your ravioli place in boiling salted water until they float up or until your desired doneness.
